These Carne Asada Tacos and Esquite are the perfect combination.


This is not an official Fallout recipe plan, but when feeding a family, I like to advertise dinners with a spiffy fallout reference just for fun!

Ingredients Needed for Mole Rat Tacos: (Carne Asada and Esquite)


Carne Asada Tacos

  • 1 lb. Just Meats Carne Asada
  • 24 Street Taco Tortillas

Esquite (Mexican Corn)

  • 32 Oz. Frozen Corn
  • 1/4 Cup Butter
  • Queso Fresco cheese crumbles
  • Tajin
  • Mayonesa (Mayo with lime juice)

(I doubled the recipe when I made it)

Ingredients Needed for Mole Rat Tacos: (Carne Asada and Esquite)  Carne Asada Tacos 1 lb. Just Meats Carne Asada 24 Street Taco Tortillas  Esquite (Mexican Corn) 32 Oz. Frozen Corn 1/4 Cup Butter Queso Fresco cheese crumbles Tajin Mayonesa (Mayo with lime juice)  (I doubled the recipe when I made it)

Step 1: Esquite


Esquite is Mexican street corn, but it's in a bowl instead of serve straight on the cob as Elote.


If you haven't tried it--it's definitely worth a go!


Dump the frozen corn into a crock pot with the butter.


Let it cook on high for 3 hours.

After the corn is finished cooking, serve it up in a mug or bowl:


Scoop in one cup of corn.


Add a tablespoon or 2 of mayonesa. (or mayo and some lime juice)


Sprinkle of Tajin. (I went a little light on this because it was new...but I love it, so taste test it and add more if desired)


And add 2 tablespoons of queso fresco cheese crumbles. (can also use cotija)


Then stir it all up.


I added green onions on top and in future I'd add in more--I love green onions.

I was able to make 25 street tacos with one pound of meat!


I bought 2 packages of tortillas, 12 in each package...and I got a bonus tortilla--so each of us got 5 tacos...and it was too much for me, I passed one off to my teenage son.

What is a Mole Rat?


Mole rats are mutated creatures found in the Fallout series, known for their subterranean lifestyle and aggressive behavior. These creatures are a result of genetic mutations caused by radiation exposure following the Great War. Mole rats have adapted to their underground habitats, with large, burrowing claws that allow them to tunnel through soil and rock with ease.


In appearance, mole rats resemble large rodents with elongated bodies, sharp teeth, and pinkish skin. They are often encountered in dark, underground areas such as tunnels, caves, and sewers, where they scavenge for food and attack anything perceived as a threat.


Mole rats are highly territorial and aggressive, often attacking wastelanders and other creatures on sight. They pose a significant threat to unwary travelers due to their ability to ambush from underground tunnels and overwhelm with their numbers.


In gameplay, mole rats are common enemies encountered by players in various Fallout games, including Fallout 3, Fallout: New Vegas, and Fallout 4. They are typically found in groups and can be challenging to deal with, especially in confined spaces where their burrowing abilities give them an advantage.
