Sweet Pork Roast and Cilantro Lime Dressing!

 Sweet Pork Roast and Cilantro Lime Dressing!
This is so yummy!  It's a Cafe Rio Copycat recipe...see what you think!
 Sweet Pork Roast:

3-4 pounds of pork loin
Put in the crock pot and cover with:
2 Tablespoons brown sugar
1 teaspoons cayenne pepper
2 teaspoons cumin
1 teaspoon salt

Cook on low all night long...or about 8-10 hours.
Next morning add:
2 cups of root beer
1 cup chicken broth
4 diced galic cloves
1 onion chopped

Cook all day and shred.
One hour before serving add:
1 cup of brown sugar
1 cup of root beer

Serve with warm tortillas or frito's chips.
Great with black beans, onions, lettuce, tomatoes, cheese, and black olives.
and...Cilantro Lime Dressing!
 Cilantro Lime Dressing:

1 cup buttermilk
1 cup mayonaise
1 packet of ranch dressing mix
1 bunch of cilantro
2 cloves of garlic
Juice of one lime

Blend in blender, refrigerate.
Super, super good!
Okay, confession.
My husband does not like this...he doesn't like sweet meat.
I make it very rarely because it's not fair to him.
But I did make it for my birthday!  :)
And I ate all the leftovers myself.
