Pressure Cooker Triple Chocolate Cheesecake!

 My friend Hollie gave me this recipe.

So, this triple chocolate cheesecake is awesome, like, to die for.
Pressure Cooker Triple Chocolate Cheesecake!
The pressure cooker is awesome and cooks it perfectly without cracking!
 Here's the step by step...recipe below.
Pulverize cookies to fine texture and add melted butter.
 Mix and press on bottom and ½ way up the sides of the 7 inch springform pan. 
Set in freezer for 10 minutes.
 Mix the cream cheese for about 30 seconds in a food processor or mixer.  
Add sugar.  
Process few seconds.  Add eggs,  one at a time,  processing after each.

With last egg add 1 tsp vanilla. 
Scrape down the bowl as you mix the filling in the food processor.
  Melt chocolate in microwave, add to mixture Process until completely smooth.
 Pour into prepared pan lined with crust.

Okay, mine is a bit chunky because I scraped the sides.  Still tastes amazing.
 Sprinkle one cup of mini chocolate chips on top.
 Add one cup water to Instant Pot.
Place trivet in pot along with foil sling,  then lower pan centered on sling, 
 make sure there is enough room around the sides of the pan for steam to rise.
If there is any water on cake use paper towel to absorb it. 
Okay, you can add the chocolate chips when you take it out after cooking,
but I did it before and it was perfect.
 Set pressure cooker for 25 minutes on high pressure. 
Turn off when done allow natural release for 10 minutes. 
Lift cake out by sling handles.

Now the hardest part...cool in fridge for at least 6 hours.
I know, one of those things you have to plan ahead for.
 But I promise you it is worth the wait!
Remove the spring form and slice!
 Enjoy the rich triple chocolate delight!

Triple Chocolate Cheesecake

1 ½ c. Crushed oreos
2-3 T. Butter melted

1lb. Cream cheese softened
½ c. Sugar
1 t. Vanilla
2 eggs
1 ½ - 2 c. Chocolate melted

1 cup Mini chocolate chips
