Toffee Bits Cookie Dough Truffles!

These delicious little truffle bites are no-bake and perfect for the holidays! They are so yummy and easy to make! I have a few varieties at the end of this posts...but these are sweet and crunchy with little bits of toffee, making this a perfect holiday treat!


Great for parties, holiday entertaining or a cookie exchange!

Let's get real.

Whenever I go to a potluck, party or event where I am bringing something to share, I want mine to be the best.  I want everyone to ask me for the recipe.  I don't want to have to bring home any leftovers...because if I do, I feel like no one liked it.

Isn't that strange, because if I really liked the food, I'd be glad for the leftovers, right!?
Well, I guess I wouldn't know with this recipe, because there have never been leftovers.  They are so good, they will fly off the plate! At the last party I brought these to, one guy picked up 5 at a time! 

This year we need to be more careful about sharing food, goodie plates, etc...but these will make a great treat for the family.

 Add to a mixing bowl:

1/2 cup soft butter
3/4 cup brown sugar
1 1/4 cup flour 
1 tablespoon milk
1 tablespoon vanilla
dash of salt


Mix well.

 
Then add all of a 8 oz package of Heath Toffee Bits
(minus 1/2 cup for topping!)

 
Mix until combined.


Roll onto baking sheet into 1 inch balls.
Makes about 50 balls.
After rolling them, give them about 10 minutes in the fridge to firm up.


Melt some dipping chocolate wafers in a bowl.
Drop and roll each ball into the chocolate, use a spoon to remove and place back on the baking sheet.
Top with a little sprinkle of toffee bits.

It doesn't need anything on top, but it's so cute and it helps cover the imperfection of my dipping!
Win-win!


The chocolate sets up fast, so do about 3 dippings and then top the 3.
Repeat until all done.


They are so good!

Just look at them.  Delightful!
Such a great variation on cookies!


 I took these to a party and they were devoured in minutes.
