Thai Sweet Mango Sticky Rice!

 This was awesome!
After going to a Thai place for dinner with my sis-in-law,
I knew that I had to try to make this
Thai Sweet Mango sticky rice!

So good.

Here's the directions:

1 cup sticky rice
 (available at Asian markets...I just used Jasmine...
and it was great to my American tastebuds!)
Soak in 1 cup of water for 20-30 minutes.

Then add:
1/4 can of coconut milk
1 tablespoon of brown sugar
1/4 tsp salt

Bring to boil and then turn to low for a simmer...about 15 minutes.
(mine started to burn on the bottom, so I would go less time--and watch it better)
Basically all the liquid should soak up into the rice.
Warm up in separate saucepan:
remaining can of coconut milk
3 tablespoons of brown sugar
  Chopped up pieces of mango...
 save some pretty pieces for plate garnishes too!
Scoop a ball of sticky rice into a bowl...
add sauce and some mangoes on the side!
So good.
It was a hit with my husband and 3 year old!
The 8 and 10 year old, not so much...
oh well, more for me!
