Peanut Butter and Jam Cookies!

 Peanut Butter and Jam Cookies!
Something about the PB&J combo is so youthful!

And summertime is the PERFECT time to make some with your kiddo's!
 They'll make the perfect little snack between swimming and sports...
Or part of lunch for summer camps!
Preheat oven to 350 degrees
3/4 cup smooth peanut butter
1/2 cup butter
1/3 cup packed light-brown sugar
1/3 cup granulated sugar {plus more for rolling later}
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1 teaspoon pure vanilla extract
1/2 cup raspberry jam
Beat peanut butter, butter  and sugars. 
Add egg and vanilla, and beat until incorporated. 
Add dry ingredients, and mix until combined.
Roll into balls.
Roll each ball in granulated sugar,

and transfer to baking sheets
Bake until cookies are puffy, about 10 minutes. 
Remove from oven, and make a cavity in centers by pressing gently with a spoon.
Return to oven, and bake until edges are golden about 6-7 minutes more.
Let cool completely.

Then get your jam or jelly!
Any of Smuckers© brand Jams, Jellies and Preserves would be perfect!
Heat jam in a small bowl in the microwave, until loosened, about 30 seconds. 
Spoon about 1/2 teaspoon into each indentation.
They'd look great in a bunch of different colors too!

My kids LOVED them.

Summertime is by far my favorite time of year.
I love the warm weather and the outdoor fun that the warmth brings!
(minus the poor daughter has bites all over her arms)

But during the summer breakfasts are still the most crucial meal of the day!
