Root Beer Float Cupcakes!!!

 These Root Beer Cupcakes were DIVINE!!!

My 3rd child, Jared, is allergic to chocolate.
So for birthday parties we try to do something not chocolate--
Ya, no fun!
These were awesome!  
My husband loved them, I loved them...the kids LOVED them!
(after that raging review, I am sorry if YOU don't love them...)

I was searching for something from SCRATCH!
You know, real homemade goodness...
and I was hoping I wouldn't have to go to the store!
Luckily, I had everything I needed!

Here's the recipe:
Root Beer Float Cupcakes

{12 cupcakes}

1/2 cup butter
1 cup brown sugar, packed
2 eggs
1 dram rootbeer extract (same stuff used in hard candy)
2 tsp root beer concentrate (homebrew)
1 tsp vanilla extract
1 1/2 cups all purpose flour
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup buttermilk

Cream butter and sugar. Add egg and egg yolk and beat.
Stir in extracts. Set aside.
In separate bowl, stir together flour, baking soda, baking powder and salt.
Add dry ingredients to wet.  Pour into lined baking tins.
Bake in a 350°F oven for 20-25 minutes. Cool.

The batter will look brown like chocolate...
And they didn't bake up as beautifully as I had hoped...so
I used scissors and trimmed around the edges!
 Add your fluffy soda frosting!

1 cup Whipped topping
2 tbsp brown sugar, packed
1 tsp root beer concentrate
1 tsp vanilla extract
  
Perfection!
